DE-Lish

Last week I was watching Rachael Ray make an extremely delicious looking meal and my mouth was totally watering, so I took this as a sign to run over to the store and pick up the ingredients. The recipe was for Portobello Bolognese, which looked like a great hearty substitute for a meat spaghetti sauce, and I am always looking for good veggie meals. The portobello mushrooms at the store were a bit pricier than I expected, but really nothing compared to going out to a nice restaurant. So I made it for dinner last night for Bub the hub and it was even better than I imagined!! And boy did it photograph well!

From chopping all the vegetables to thickening the sauce, the whole thing took me a little under 2 hours. I know this sounds like a long time, but I am horrendously slow at meal cooking (ask any of my dinner party friends) and I tend to forget to read recipes all the way through before starting, which usually results in a couple of mishaps that take even longer to correct. I think I am slowly improving though (just don't ask Bub the hub) and now I am requesting dinner party friends to join in the chopping fun (thanks Ali and Alla :) so it goes a bit smoother. In other words, I think any other normal cook can expect this to take about an hour. If you are Rachael Ray-caliber, probably only annoyingly like 40 minutes. And it's soooo worth it. We prefer bowtie pasta and use herbs from the front porch, but you know, that's our prerogative. Here's one more photo to convince you. I am off to have the left-overs.
